

Catoctin Creek Pearousia Pear Brandy
Pearousia is a unique collaboration between Fabbioli Cellars and Catoctin Creek, where the owner and vintner at Fabbioli Cellars, Doug Fabbioli, created a delightful pear wine that we then distilled into brandy. This pear brandy was aged in oak barrels, resulting in a truly one-of-a-kind offering and our first fruit spirit. Despite the aging process, the fresh aroma of the pear is still present, with hints of muskiness intertwined with the caramel and vanilla flavors from the oak. Upon tasting, you can savor the sweetness and flesh of the pear, with a lingering and pleasant aftertaste of the spirit. Pearousia is a limited release local pear brandy made from seasonal fruit, ensuring its accessibility to more people. Only 1000 bottles will be produced this season. The musky notes of the pear complement the caramel and vanilla flavors from aging, creating a delicious drinking experience that reminds you of a freshly baked pie straight out of the oven.
