Fassbind L'Hritage de Bois Prune
As early as 1395, ancestors of the Fassbind family were involved in cultivating cherry trees and producing cherry brandy in Holland before moving to Switzerland. However, the official Fassbind distillery was not established until 1846. Shortly after, in 1856, the distillery was honored with a gold medal from Napolon III at the World Exhibition in Paris, a highly prestigious recognition for European distilleries at the time. All Fassbind brandies are crafted using local fruits, herbs, and berries, which are either individually infused or distilled in Marienbad. The Fassbind L'Hritage de Bois Prune, for instance, is distilled from Lhrer plums and aged for a minimum of one year in custom-made plum wood barrels to enhance its aromatic qualities. This aging technique, known as "private wood maturation," is less commonly practiced nowadays. To preserve the intricate flavors of this brandy, L'Hritage de Bois Prune is bottled without undergoing a cold filtration process, and each bottle is assigned a unique number, allowing for traceability of the batches. The aroma boasts hints of dried plums and a touch of cinnamon. On the palate, rich flavors of prunes and plum jam take the forefront, accompanied by nuanced spicy wood notes. The finish is long, fruity, and slightly dry.
