The SissiS brand is committed to producing high-quality products in honor of Empress Elisabeth of Austria. Their fruit spirit, SissiS Waldhimbeere, is made using wild raspberries. The raspberries are carefully prepared, removing seeds and stems, and turned into a pure fruit puree. This puree is then mixed with water and a tasteless yeast culture for fermentation. The resulting fruit mash is distilled under vacuum to control the temperature. Following distillation, the spirit undergoes a complex aging process lasting eight months, involving steel tanks, clay vessels, and 50-liter wooden barrels. The spirit is then macerated with dried fruits. The outcome is a sweet and tangy drink with floral and fruity notes, balanced sweetness, and a smooth finish. Because the maceration with dried fruits is unconventional for a high-quality brandy, the SissiS Waldhimbeere is legally labeled as a fruit spirit.
