St. George Reserve Apple Brandy

St George has a history of working together with wineries and restaurants to create unique spirits, like grappas. However, they do not engage in this kind of collaboration often because it can be quite expensive due to the small quantities produced. Normally, during the harvest season, there is not enough time to work with a variety of fruits such as pears, cherries, and raspberries. However, in 2011, after discussions between the distillery and a restaurant, St. George was connected with a reliable apple supplier, leading to the creation of this specific apple brandy. It was first introduced in the fall of 2014 and is made exclusively from apples from one orchard. The brandy is aged in oak barrels for two to three years and a mix of used American whiskey casks and used American and French wine casks are used during the aging process. The majority of the blend is between six and seven years old. The final brandy has a reddish-brown color and a distinctly floral taste. Aromas and flavors of apple blossom, carnation, almond, and cream soda are complemented by mulling spices and baked apple.
