The distillery at the estate has two continuous flow Armagnac stills. Distillation takes place in early December, about a month after the harvests end. It takes one to two weeks to produce the white Armagnac, which is then stored in 400 oak barrels at the Château. The wine warehouse contains 40 different vintages of Armagnac, some of which have been aging for up to 50 years. The Chateau de Lacquy's XO Armagnac is matured for at least 17 years and is a blend of 60% Baco, 30% Ugni Blanc, and 10% Colombard. It is a rich and complex Armagnac with flavors of vanilla and spice. The color is brown with a green rim. The aroma is very aromatic and sweet, with hints of candied nuts, oak, vanilla, dried figs, and chocolate. The taste is multi-layered and ripe, with a long, creamy finish that has notes of spice and vanilla. It is well-balanced and perfectly matured.
