Description
Chapmans Apple Brandy, produced by the team at Republic Restoratives in D.C., is made using apples sourced from Pennsylvania. The apple juice is fermented and distilled on its lees, which enhances its flavor profile. Our process involves fermenting a blend of biodynamic apple juice and then resting and distilling the cider on the lees in a pot still, resulting in the strong apple notes of Chapmans. To further enhance the taste, the apple spirit is aged in both French and American oak barrels for a maximum of 6 months, achieving a bold flavor reminiscent of orchard fruits. We have carefully blended the brandy to highlight the best qualities of apple brandy from both French and American traditions, and we believe that it would make Johnny Appleseed Chapman proud. On the nose, you will detect prominent fruity aromas, including sweet citrus, baked golden delicious apple, and pear. The palate offers a medium body, delivering flavors of Bartlett pear, honeydew, and white chocolate. The finish is complex, with lingering notes of caramelized ginger, overripe pear, and vanilla.
