Description
Double distilled. Surprisingly fresh, fragrant, and gentle with vibrant flavors of apple, pear, and red plum. Calvados Daron Fine is owned by French spirit company Maison Ferrand, and it is made from a recipe that has been passed down through generations. The first press juice of tart and sharp apples, as well as a variety of perry pears, are used to make the cider which is then distilled to create this Calvados. Although it does not have an official age statement, the spirits in this blend have been aged in oak for at least 2 years. The aroma is subtle, with a distinct apple scent that is slightly thin. When tasting, there is an initial rush of alcohol followed by notes of old wood. The apple flavor lingers, accompanied by hints of vanilla and cinnamon on the finish. Similar to other high-quality Calvados, Daron is produced in the Pays d'Auge region of France. Distillation begins immediately after fermentation to preserve the range of aromas. The maturation process takes place in carefully chosen small Limousin oak barrels. Although these barrels are more expensive, they provide better ventilation and allow for more harmonious aging. The constant cellar temperature enhances the development of a sweet aroma.
