Pale And Dry, named for its light color and natural level of sweetness, distinguishes itself from other eau-de-vie of its age. Delamain, the brand behind Pale And Dry, is committed to preserving the true essence of Grande Champagne Cognac and refrains from altering the taste or color of the brandy using caramel or sugar. Instead, Delamain sources young eaux-de-vie from trusted grower/distillers following each harvest for evaluation. These selected spirits are then aged separately in 350-liter oak barrels known as roux to avoid excessive tannin from new oak. After 20 to 25 years of aging, the Cognac is blended and given an additional 2 years of aging to allow the flavors and textures to harmonize. Before bottling, Delamain employs older, lower-proof cognac to reduce the alcohol content rather than compromising the rich flavor by adding distilled water. The aroma of Pale And Dry offers delicate floral top-notes and a hint of vanilla. The palate delivers a remarkable intensity of fruit and spice, accompanied by a dry citrus finish. Floral notes, vanilla, and a touch of oak spice are evident on the nose, while the palate is characterized by a fruity-floral profile with a dominant tart-spicy note.
