Fassbind L'Héritage de Bois Kirsch
Description
As early as 1395, the Fassbind family's ancestors in Holland were cultivating cherry trees and crafting cherry brandy before migrating to Switzerland. However, it wasn't until after 1846 that the official urschwyzer distillery Fassbind came into existence. Only a decade later, Napoléon III honored the distillery with a gold medal at the World Exhibition in Paris, which was a highly prestigious accolade for any European distillery at that time. All of Fassbind's spirits are made using locally sourced fruits, herbs, and berries, which are either macerated or distilled separately in Marienbad. The Fassbind L'Héritage de Bois Kirsch, for instance, is distilled from cherries grown in the Rigiregion and Schwarzbubenland. To enhance its flavor profile, it is aged for at least one year in cherry wood barrels and then bottled without undergoing cold filtration, with each bottle being individually numbered for traceability of its specific batch.
This cherry brandy is incredibly fruity. The scent contains subtle undertones of almond, wood, and ample cherry. On the palate, these aromas persist and harmonize with delicate tannins. The finish is long-lasting, leaving a powerful essence of wood.
