As early as 1395, the first ancestors of the Fassbind family in Holland grew cherry trees and distilled cherry brandy before moving to Switzerland. However, it was not until 1846 that the official original Swiss distillery Fassbind was established. Just a decade later, Napoléon III honored the distillery with a gold medal at the World Exhibition in Paris, which was considered a prestigious accolade for European distilleries at the time. All Fassbind spirits are crafted using local fruits, herbs, and berries, which are either soaked in liquid separately or distilled separately in the Marienbad. The Fassbind Les Trouvailles Walderdbeergeist, for instance, is produced by distilling destemmed wild strawberries from Arth, with a maximum annual availability of 250kg. These strawberries undergo a six-week maceration process before being distilled using a countercurrent system. The resulting strawberry brandy is then aged for 18-24 months to achieve optimal flavor before bottling. It is characterized by the aromas of strawberry jam and cassis, and on the palate, it delivers the flavors of wild strawberries, pepper, a hint of licorice, and subtle notes of blueberry. The finish is long and fruity, with a subtle pine undertone.
