Baardseth VSOP Cognac Distillery produces a cognac that is made from a blend of the finest wines from the Cognac region, specifically from the Grande Champagne and Petite Champagne vineyards. The distillates from these wines are aged separately in carefully selected French oak casks, with some new casks being used. The casks are toasted lightly to medium to retain the delicate flavors of the distillates. The aging process takes 4 to 6 years, resulting in a well-balanced and elegant cognac. The appearance of the cognac is a medium amber color with dark copper and golden glints. The aroma is characterized by crystallized fruits, dry apricot, orange peel, prunes, and a fresh mature grape note, with hints of light toasted oak. On the palate, the cognac offers a generous and dry taste of crystallized fruits, followed by notes of vanilla, pastry, and a light smoky flavor. It also has great minerality, oxidized tannins, and a light rancio character. The finish is long-lasting.
