The Baron Otard VS Cognac is a vibrant blend of eaux-de-vie from four different appellations. Each contributes unique characteristics to the blend: Grande Champagne provides a strong structure and mineral content, Petite Champagne adds vigor, Borderies brings a sweet floral note, and Fins Bois contributes an abundance of orchard fruits. The minimum age of the blend is three years, with the initial six months spent in new barrels to extract all the flavors from the wood. The casks are made from Limousin oak, known for its rich vanilla notes, which are evident in the aroma. The history of Baron Otard Cognac dates back to 1795, when Jean-Baptise Antoine Otard, the grandson of Scottish Baron James Otard, returned to France from exile in England. With his winemaking background, he allegedly developed his own Cognac during his exile and brought it back to France. He purchased the Royal Chateau in Cognac, saving it from destruction, and launched Maison Otard, his own Cognac company. Today, the Chateau is a popular tourist attraction and houses the aging barrels of eau-de-vie that will become Baron Otard Cognac. The VS Cognac has a yellow amber appearance with a hint of green. On the nose, aromas of apricot, orange peel, dried apple, almond, toffee, and toasted vanilla pod are present. The palate is full and fruity, with pronounced ripe apricot flavors. The finish is medium in length and offers a subtle hint of chili spice. While this Cognac is typically enjoyed neat, it is also gaining popularity in cocktails. One recommended mix is with Fentimans Tonic Water, using a ratio of 3 parts cognac to 1 part tonic water.
