Catan Pisco has a well-balanced recipe that was developed over a period of 18 months. The aromas of fruit and citrus capture the pureness of their carefully selected Pedro Ximenez grapes. The distillation process creates a smooth progression, as intended by their copper stills. Towards the end, the traditional Chilean flavors come through, with notes of stone that come from the natural irrigation provided by the Andes. The nose is clean and scented with truffle, mushroom, green vegetable, matchstick, and fuel oil aromas. The palate is gentle, with hints of flowers, pine needles, musk, pepper, and spices. The finish has a hint of camphor and ends with a cleansing lemon oil note.
