This Cognac is a testament to their skill in blending the finest Cognac from different growth areas. It is aged for 15 to 25 years in oak casks in their historic winery. The Chateau des Plassons XO Cognac is made from over 10 different eaux-de-vie grown with Ugni Blanc grapes in the Bois Bois terroir, where the chateau is located. This Cognac represents their rich history and is crafted in a picturesque setting. The vineyard has been established since the 17th century and the current vines are over 30 years old. The vineyard is situated in a unique geological plateau of limestone, which creates ideal conditions for producing fine Cognac. The Cognac is crafted by two passionate brothers, David and Julien Pannaud, who have a long-standing family tradition dating back to the 1500s. They allow the wine to ferment naturally and use traditional copper stills for the distillation process. This is a crucial step that determines the aromatic quality of the Cognac. The Cognac has a deep amber hue that is transparent and sparkling. It has delicate floral scents of jasmine and narcissus, with hints of nutmeg and cedar wood.
