Our Reserve Apple Brandy, aged for 8 years, rivals the best French apple brandy, Calvados. We use whole Golden Delicious apples from the Yakima Valley, crush and ferment them, and then distill the entire fruit mash. Following the traditions of Normandy's Calvados makers, we age the apple spirit in a combination of old and new French Limousin oak barrels for at least eight years. The outcome is a stunning amber brandy with a pronounced apple aroma, as well as the sophistication and complexity acquired from its time in oak. Our Reserve Apple Brandy is also appealing to those who enjoy traditional brandy, as it has a familiar color and the qualities gained from barrel aging. The nose offers a wonderful blend of oak and fruit, though it is delicate. On the palate, the apple flavors shine through, accompanied by sweet vanilla. The finish exhibits a touch of tannin and is long-lasting.
