The Courvoisier Vintage Connoisseur Collection 21 Years Cognac is made using the finest eaux-de-vie from the exclusive Cognac-making region of Grande Champagne. These eaux-de-vie have been aged in Courvoisier's cellars for over two decades. The barrels are made of fine-grained oak from the Tronçais forest, which is perfect for extended maturation. Unlike most Cognacs, the Connoisseur Collection declares age statements because Courvoisier developed a tracking system to determine the age of specific eaux-de-vie. The history of Courvoisier Cognac dates back to the time of Napoleon Bonaparte, when Emmanuel Courvoisier opened a wine and spirits shop in Bercy, on the outskirts of Paris. The business grew rapidly and eventually Felix Courvoisier and Jules Gallois took over and moved the headquarters to Jarnac in the heart of the Cognac region. The taste of this cognac is described as nutty and rich, with notes of sultanas, dried peels, pepper, rancio, and sticky toffee pudding. It is smooth and rounded on the palate, with flavors of peach juice, Thai spices, coconut, coriander, lime, and gingernut biscuit. The finish is long, rich, and biscuity. This cognac is unique and extraordinary, allowing the matured flavors to fully develop.
