The Private Distillery Gebhard Hämmerle is a subsidiary of the Austrian Freihof distillery, which was founded by Gebhard Hämmerle I in 1885. This inn also had a distillery attached to it. In 1979, the brand was officially registered as a representation of high-quality fruit brandies. In 2015, Johann Drexel took over the Freihof distillery from his grandfather Gebhard Hämmerle, who had managed it from 1952 to 2018, and implemented modernization efforts. Hämmerle's fruit brandies are created through close collaboration with EU fruit growers, who supply fruits that are harvested when they are perfectly ripe. The master distiller's expertise is then employed to craft a top-notch brandy that boasts an intense, aromatic, and genuine flavor, without the need for additives, flavors, or sugar. The fruits used for the clear "Subirer" brandy are sourced exclusively from the Vorarlberg region, which is the native habitat of the rare and slow-growing Sau-Birne pear. This type of pear, while inviting in fragrance, cannot be eaten in its natural state due to its woody flesh and bitter taste. Only through distillation can the Sau-Birne's aromatic potential be unlocked. In line with tradition since the post-war era, only Vorarlberg distillers are permitted to produce "Subirer." This pure pear brandy variety offers a strong, fresh, bitter, and fruity taste. It is best served at a temperature between 15-18°C and pairs well with flavorful meat dishes or cheese delicacies.
