Jean-Luc Pasquet and his wife, Marie-Françoise, transitioned from conventional fruit growing to organic winemaking in 1995. They received certification for organic agriculture in 1998. Their Coeur de Grande Champagne is an entry-level offering that is aged in Limousin oak for 5-10 years. It has a golden yellow color and intense aroma. The nose and palate are filled with vibrant flavors of pear, apple, and grape, complemented by hints of vanilla, oak, and citrus. Despite being five to ten years old, it maintains a youthful and lively character with a smooth finish.
